big handful spinach, chopped
2 lime, squeezed for juice
1/4 cup sprouted quinoa - link to left about how to sprout
1/4 cup mango
1 endive head, sliced
1/2 jalapeno, cut into bits
1/2 a pint of grape tomatoes, cut in half
1/2 red pepper, cut into bits
1 Persian cuke (cut into quarters)
1/8 tsp. dried oregano, ground up in palm of hand
microgreens to decorate top of salad
Put lime juice over spinach and let soak while add rest of ingredients. Mix and eat!
