No-Fat Raw Tamarind Cabbage Rolls

- Cabbage Leaves - smaller ones with less rib

- Soak 4 tamarind pods - deseeded and soaked for 30 mins. in:
2 oz. pineapple juice
juice of 1 lime
1/2 lemon
slice of jalapeno

- Put in food processor:
3 oz. spinach
handful of cilantro
handful of arugula

Topping:

1 small cucumber, diced
2 roma tomatoes, sliced in 1/2
springs of dill

- Add tamarind pods and marinade to food processor with the greens.  Blend until chopped slightly.  Put in cabbage rolls and top with sliced tomatoes, cucumbers, and dill.
