No-Fat Raw Trigiano Carrot Soup

6 carrots juiced
4 cloves of garlic juiced 

1 zucchini juiced

5 cups fresh tomatoes
2 cups baby spinach
1 jalapeño seeds included minced
6 basil leaves chopped
Basil for garnish

Juice the carrots, zucchini,and the garlic and add to a food processor
Add the tomatoes , spinach and the basil and blend until smooth.
Add the jalapeño and mix until combined

Pour into a bowl add garnish and enjoy

Low-fat Raw Stuffed Trigiano Tomatoes - 4 Ways!

I started by cutting the top of the tomatoes with a pairing knife. Removing the pulp and seeds with a melon baller. Save the pulp and seeds and add them to a food processor.
Next I prepared the marinade.
Marinade:
Add to the tomato pulp and seeds 1 1/2 teaspoons of smoked paprika .
1/2 teaspoon of cumin
The juice of 2 limes.
Process until combined.
The four recipes:
Cherry tomato Kiwi mango salsa
5 jalapeños chopped
3 green bell peppers rough chopped
2 kiwis rough chopped
1 mango rough chopped
1 red onion diced
Enough red cherry tomatoes to make 6 cups roughly chopped
The juice of 1 lime
Fresh basil leaves chopped
Fresh thyme leaves chopped
Fresh parsley chopped
Fresh cilantro chopped
The seeds of 1 jalapeño
Mix all the ingredients together to combine
Spinach, zucchini and raw nori stuffed tomatoes
Place 1 bag of fresh baby spinach leaves into a food processor and pulse until rough chopped.
Remove from the processor.
Add the raw nori 4 sheets,and pack it down. Pulse until rough chopped
Remove from the processor.
Chop up a small zucchini about 1 cup and add to the spinach and nori and combine. Add 1/2 cup of the marinade and let it marinate for 4 hours.
Place a mound of the stuffing into a tomato and top with some raw sprouted pumpkin seeds
Red pepper, Portabella mushroom stuffed tomato
Dice 1 red pepper
Chop 1 pack of Portabella mushrooms add 1/2 cup of the marinade and let it marinate for 4 hours. Stuff like tomato and place on a plate.
Fresh fig and zucchini with fresh squeezed orange
Chop 1 pound of fresh figs
Note * Mash the figs just a little with a fork until it is to your liking.
Chop 1 small zucchini
Squeeze 1/4 of a fresh Valencia orange over the ingredients and combine.
Stuff into the tomato and place onto a plate 🌱

Lowfat Raw Fried Rice

Fried Rice* (a Janis Padilla reviewed and approved recipe ;)

1/2 a head of cauliflower, broken into florets
1/2 cup of raw fresh green peas
1/2 cup of organic raw fresh corn (or sub cubes of zucchini)
1/4 cup finely chopped carrots into little cubes

Nama Sesame Sauce

1/4 cup sesame seeds
1/2 med. zucchini
1/4 small eggplant, peeled and cut into chunks
1 garlic clove
3 sundried tomatoes soaked in 1/4 cup water - save liquid for sauce
4 dates

Pulse cauliflower in food processor until the size of rice grains.  Put in bowl.

Put all sauce ingredients into blender, including water from soaking the sun dried tomatoes into blender.  Make sauce in blender until smooth.   Mix seeds into the rice and toss well until the sauce evenly coats all the rice.  Add peas, corn kernels (or zucchini cubes), and carrots into bowl with saucy "rice."

No-Fat Raw Peach Salsa Carlson Style

This from the brilliant Brenda Carlson over at Raw Vegan Fruitairans 4 life. :) 

Peach Salsa

4 peaches, peeled & diced
2 tomatoes, diced
1 red onion, diced
Juice of 1-2 limes
1 jalapeño pepper, seeded & diced fine

Some cilantro or other herb of choice. I used fresh basil since that's what I had.

No-Fat Rawvana Daikon Pasta with Mango Sauce

Original Recipe* from Rawvana:

Use a spiralizer to make the daikon noodles, and add whatever veggies you want.

Dressing

1 mango


1 zucchini


Half tomato


1/2 lime juice 


Small piece of ginger


1 strip of green onions


Blend the dressing ingredients and pour it on the noodles and good to go.

Lowfat Raw Sharmila Sauce for Zoodles

An original creation by Sharmila Prabhu - raw food goddess!

Sauce:

8 cashews soaked 
half zuchini
2 sun-dried tomatoes
2 dried red chilies
2 garlic cloves
1 mejdool date
a small piece of celery
little lemon juice

Put in blender and blend until smooth.  Still lot of red sauce left for tomorrow and day after.

No-Fat Raw Love's Dip

1 bunch cilantro 
small piece of ginger 
1 clove of garlic
lemon juice from one lemon, peeled and whole (or according to taste) 
2 Roma tomatoes
1 chili


a few cumin seeds (or a shake of cumin powder) 

Blend together.

No-Fat Raw Vegan Saag Paneer

1 head of garlic, separate cloves from base but leave peels on the cloves

1 lime, peeled and left whole
1 lemon, peeled and left whole

Put all in blender.  Blend until smooth.  Push through strainer for garlic paste. Put strained garlic paste back in blender. Add into blender:

1 Roma tomato
1/2 small zucchini
1/3rd of a cup of sprouted mung beans
handful of cilantro
grated ginger, to taste
tiny bit of grated turmeric (optional)
5 oz. spinach (or more)
less than 1/4th of a sweet onion
slice of jalapeno

Blend tomato and zucchini in garlic paste first and then add beans and blend just a bit; then add rest and leave chunky. Put in serving bowl. Add a shake or two of cumin and stir well.

Put squares of jicama to mimic the paneer (optional). Put over cauliflower rice or jicama noodles.

No-Fat Raw Dal

handful of cilantro

Blend until slightly chunky. Pour over cauliflower rice or jicama noodles (pic below over jicama noodles).

No-Fat Novi's Raw Sambal

6 Roma tomatoes, diced into small chunks
10 thin slices of red onions
1/2 jalapeno (no seeds or pith), sliced thinly and diced

Grind in a mortar and pestle - preferably stone.  Leave slightly chunky.   

Squeeze some lime over top if a bit of citrus desired.  

Can put as pizza sauce, in soups, on zoodles* or cauliflower rice.

The original recipe from Novi:

 I use 1 tomato, 2red onions, 1 chilli, and a little bit salt. Sometime i mix with big red chilli and white onion.

No-Fat Raw Courgette Balls (Kolokithokeftedes)

4 zucchini

Put in food processor and blend until small pieces.  Push through sieve to get out excess liquid.  Save liquid to add to sauce* to put over the balls.  


Put pureed zucchini in large bowl. 


12 okra

8 oz. cremini mushrooms
handful of dill
handful of parsley
handful cilantro
8 green onion - white and green
2 garlic
1/8 tsp. ground cumin
1/8 tsp. ground coriander

Put okra into food processor and process until small pieces.  Next do the same to the mushrooms.  Hand cut the dill, parsley, cilantro and onion.  Dice into small bits the garlic and add with cumin and coriander.  Mix well and use ice cream scoop to put onto plate.  


Place into romaine lea with greens, sauce (see below for suggestions) and grated daikon on top.

No-Fat Raw Baba Gahnouj Dressing

To Make Garlic Sauce:
1/2 head of garlic, unpeeled and broken apart into individual cloves
2 lemon, peeled and whole
Blend well and press through sieve leaving behind skins of garlic.  Add garlic sauce back into blender.

Add to Blender with Garlic Sauce:
1 eggplant, peeled and juiced for pulp
1 celery stalk
1 lemon, peeled and whole
5 green onion - white and green parts
8 dates, soaked in juice from 1 lime
slice of jalapeno
hunk of aloe vera gel, fresh
shake of ground cumin 
shake of ground coriander
1/8 tsp. smoked paprika - sweet or hot or a combo

Basil - 7 leaves, chopped to place on top of sauce

Blend until desired consistency.  Cut

To Make Garlic Sauce:
1/2 head of garlic, unpeeled and broken apart into individual cloves
2 lemon, peeled and whole
Blend well and press through sieve leaving behind skins of garlic.  Add garlic sauce back into blender.  
Add to Blender with Garlic Sauce:
4 Roma tomatoes
3 sun-dried tomatoes - soaked in juice from 1 lime
1/2 red pepper
1 celery talk
5 medjool dates, soaked in juice from 1 lime
slice of jalapeno

Blend until desired consistency.

No-Fat Raw "Creamy for Miles*" Sauce

Sauce

1 cheek frozen or fresh mango
1/2 red capsicum (pepper in US)
2 semi dried organic tomatoes (dehydrated)
1/2 clove garlic
1/2 squeeze lime and zest
1 peeled zucchini (for the creamy base)
1/2 cup fresh coriander (cilantro)
1/4 cup fresh mint


Blend and play around to get your own tastes right.

Strawberry Banana Date Puree

1 pint strawberries
5 bananas
6 dates

Place in food processor.  Puree.
