No-Fat Raw Tangy Green Dressing

Dressing:
  • 1 cup baby spinach, lightly packed
  • 1/4 cup cilantro (mostly leaves, stems are ok), lightly packed
  • 1 roma tomato, cut in half
  • 2 slices jalapeƱo or 1 slice serrano pepper
  • 1/4 sweet onion, peeled and roughly chopped
  • 1 garlic clove, peeled, roughly chopped
  • lemon/lime/grapefruit/orange (any combo) - about 1/3  cup

Put all in food processor and blend until well mixed. Put over salad and add fresh oregano to top.
