No-Fat Raw Zucchini Chutney

  • 2 zucchini
  • 5 tamarind pods, pods and seeds removed
  • 1 red pepper
  • 1 garlic clove, minced
  • 2 or 3 dates
  • 1 lemon
  • 1 tsp. fresh gingerroot
  • 1/8th tsp. cumin
  • 1/8th tsp. coriander
  • 1/4th inch slice of lemongrass
  • 1/8th tsp mustard powder
  • 1 slice jalapeno

Put all in a food processor and pulse until well blended.  Good as a spread on wraps with lettuce and more tomato.
