Low-Fat Tried and True Jalapeno Taco Sauce for Nancy

1/3rd avocado, mashed
shake of cumin
shake of coriander
1 garlic, crushed
1 lime, squeezed (soak 2 sun dried tomatoes in lime juice for 30 mins.)
1/4 sweet onion, finely minced
handful of cilantro chopped
big fat slice of jalapeno, diced

Add all ingredients except lime juice to mixture...leave avocado smooth or chunky..your preference.

Add lime juice but not sun dried tomatoes.  Add more lime juice if want thinner or water or even celery juice for some saltiness.

No-Fat Raw Papaya Dream Pudding

One whole papaya
one frozen banana
one orange Squeezed
one tangerine, whole and peeled 
Use 3 Tbsp. of seeds (or less if don't want cinnamon hot flavor)

Blend - you can see the peppery flakes in the pudding.This is DELISH!!

No-Fat Raw Mushroom Crust Pizza with all the Toppings (no dehydrator needed)

For pizza bites:
Use Cremini mushrooms
For larger pizza crust:
Use Portobello mushrooms
Scoop out either mushrooms and chop up the insides and set aside. 
For sauce - soak: 
1/4 c. sun-dried tomatoes - soaked in juice from lemon
Soak 3 dates with the above
2 in piece of leek - sliced very thin and soaked with rest
After 30 minutes, blend well with 1 celery stalk, 1/2 zucchini, 1 garlic, and chunk of jalapeno (optional).
Soak in lemon juice for 30 minutes while sauce is soaking too: 
insides of the chopped up mushrooms
chopped green onion 
thinly sliced bell pepper
----------------
Assemble Pizza
Put sauce inside mushrooms and add:
soaked mushroom bits
soaked green onion
add soaked bell pepper
And top with thin slices (thinner the better) of Roma tomatoes 


No-Fat Raw Cherry-licious Salad Dressing

1 cup frozen cherries thawed
1 date
1 celery stalk
1 small Fuji apple
Blend until smooth.

Optional: top with 1 Tablespoon of hemp seeds. (will be low-fat (not no-fat) then)

Salad of Romaine, cucumber, Daikon radish

Low-Fat Raw Green Goddess Dressing

Dressing Ingredients
  • 1 slimcado avocado (Florida smooth skin green ones)
  • 2 garlic clove
  • 3 tablespoons lemon juice
  • big handful of spinach, keep stems
  • big handful of cilantro, leaves and stems

Noodles 
2 medium cucumbers, spiralized
Instructions
  1. Blend all dressing ingredients in a high speed blender or a food processor till smooth. Pour over cucumber noodles with watercress.

No-Fat Raw Spicy Salsa Soup

Big handful of Cilantro
1 pint of tomatoes
1 garlic clove
2 dates
1 Celery stalk
1/4th tsp of freshly dried oregano (buy fresh and put in cup to dry)
lemon juice - 3 squeezed
pinch of cayenne
shake of smoked paprika
pinch of onion powder

Blend until smooth...:)

No-Fat Raw Curry Soup

4 spears of pineapple
1 med. cucumber
1/4 red onion
1 garlic clove
pinch of cayenne
1/8th-1/4th tsp. curry powder - to taste

Blend in blender until smooth.

No-Fat Raw Cara Cara Juice

About 12 Celery stalks - juiced in juicer
2 lemons 🍋 squeezed 
2 Cara Cara oranges squeezed

Just put into old school twist and turn juice thingie...and mix all juices together.

Low-Fat Creamy Mustard for Stefanie

Raw Mustard
1 Tbsp. mustard seed (soak in lemon juice at least 14 hours)

2 Tbsp. sesame seeds  (also soak in same lemon juice at least 14 hours)
1/2 avocado
6 Tbsp. lemon juice (use from soaking liquid and add more if needed) 

2 celery stalks
1 small zucchini
2 cups fresh cauliflower (or dehydrate it) 
add up to 1/3 cup water or more lemon juice - to taste - I did ALL lemon juice...:)  But I am crazy for lemons - no more than 1/2 cup of liquid - some combo of lemons and water.  
5 dates

2 shakes of powder turmeric...for color (or few grates of fresh turmeric) 

Throw all in blender and let dates soak in liquid for 20 minutes before blending. Blend until smooth. 


No-Fat Raw Open-Faced Reuben Sandwich

Cut zucchini in half
Scrape out seeds and hollow it out like a canoe

Put in tupperware and squeeze lemon juice into each half - fill up the hollowed out space with lemon juice. (optional: can also use this Tomato Dressing (link2left) + lemon juice for zucchini)
Let marinate overnight.

4 oz. mushrooms
4 large collard leaves - cut leaves into strips vertically

Put each into separate ziplocs with the following marinade:

1 grapefruit, peeled and whole
2 tangerines, peeled and whole
1 date soaked in blended citrus for 15 mins.
Scraped out seeds from zucchini
1 garlic clove
1 slice of serrano or jalapeno

Blend well...pour over mushrooms...squeeze out air and close well. Put flat on plate in fridge overnight.  In a separate ziploc, put in collard strips and freeze overnight.  

Take out collards the next day to thaw. Will wilt them and make them taste dehydrated. 

Next day, take out zucchini and use lemon juice on tomatoes and mushrooms below.  

Cut up Roma tomatoes and mix with mushrooms and 1 tsp. Menschy Mustard (link2left) mustard and a some of the lemon juice from marinating zucchini.  Put them into zucchini half and top with marinated collard strips. 




No-Fat Raw Foot Long Subs

Peel one long cucumber
Cut the long cuke in half lengthwise
Scrape out seeds and put into marinade below

Put in ziploc with marinade of your choice...I used:

1 grapefruit, peeled and whole
2 tangerines, peeled and whole
1 date soaked in blended citrus for 15 mins.
Scraped out seeds from cucumber
1 garlic clove
1 slice of serrano or jalapeno

Blend well...pour over cucumber halves and mix around...squeeze out air and close well. Put flat on plate in fridge overnight.

Next day, take out cuke halves letting marinade slide off back into bag.

I cut up tomatoes and cilantro and freshly dried rosemary.  Put lemon juice and tsp. of Menschy Mustard on it and mixed. And put into sub.



Lowfat Raw Weiss Pineapple Guacamole

2 avocados, mashed
1/2 cup pineapple, chopped
Juice of 1 lime
1/2 cup cilantro, chopped
1/4 cup red onion, diced
Amazing flavors between it all.
