No-Fat Raw Minty Mango Dressing

1 mango
12 mint leaves

No-Fat Raw Mango Dressing with Cabbage and Jicama Salad

1 mango 
1/2 inch hunk of ginger
1 pear
1 lemon, whole and peeled
dash of celery seed

Put all in blender.  Blend until smooth.  Will coat everything beautifully. 

Put over a cabbage, jicama, beet, carrot and green onion salad.

No-Fat Raw Butternut Squash Soup

1/2 lb. of butternut squash, rough cut in chunks with no skin
3 Tbsp. water
handful of cilantro
1/2 in. hunk of ginger
few shakes of pumpkin pie spice
few cranks of black pepper (or fresh or dehydrated papaya seeds) 
3 dates - optional

Put all in food processor and blend.  

Optional - cut up 2 dates and put pieces on top of soup in bowl.

No-Fat Raw Glittery Nice Cream Bowl

8 strawberries, cut in slices

Line up in 1/2 of bowl

4 frozen bananas
1 cup frozen wild blueberries

Put in food processor (or blender) until mixed.  Put in bowl and add:

4 cut up dates on top

Will look glittery when light catches it!  Recipe generously provided by the funny and creative and talented Daniel Shultz.




Low-Fat Creamy Sweet Potato Rice

1 sweet potato, peeled and rough chopped

Put in food processor and make sweet potato rice or leave chunkier.  :)  

Dressing:

1/2 zucchini
1 stalk of celery
1 lemon, peeled and whole 
4 scallions, white and greens
1 garlic clove
slice of jalapeno
1/3rd of an avocado

Blend in blender until smooth.  

Stir into sauce :


1 sprig of dill (or more to taste) - chopped 

Pour sauce over sweet potato rice.  


No-Fat Raw Marinara Dip

2 Roma tomatoes
1 celery stalk

Put in blender until barely liquified.   Add in:

5 deglet noor dates
3 sun dried tomatoes

Let soak for 10 minutes and blend well.

Pour into serving bowl.  Add:

handful of cilantro leaves, chopped*
1 garlic clove, minced
lots of basil leaves, fresh, chopped*
lots of oregano leaves, fresh, chopped*
*I don't blend fresh herbs because I find it can make them bitter.  

Add to dip.  Stir and spread on cucumber slices.  :)

No-Fat Raw Cheesy Creamy "Butter-y" Sauce

1/2 lbs. of butternut squash, rough cut into cubes
1 inch turmeric - cut into smaller bits
1/2 cup sun dried tomato soaked water with 5 sun dried tomatoes
1/2 yellow or orange bell pepper
2 dates
1/4 tsp cumin
1 slice of jalapeno
juice of 1/2 to 1 med. lemon
big handful of spinach or one romaine heart (optional) - (leave out of blender to keep color and just add chopped to sauce)

Blend all in blender and put over noodles and greens.  Created with love and respect for Tania - my yumiiiiiiio hermana.  Can also be used as a dressing or dip!

No-Fat Raw Date-Tamarind Chutney

1/2 red pepper
5 dates
3 tamarind
2 sun dried tomatoes
4 Roma tomatoes
1/2 zucchini
1 stalk celery
handful of cilantro
slice of jalapeno 
a shake or two of mustard powder
1 garlic clove
tiny pinch of powdered cloves
1 in. hunk of ginger  

Blend tomatoes until just liquified..add in dates, sun dried tomatoes, and tamarind to blender and let sit for 10 minutes.

Put sauce into a bowl and let sit for a few minutes to let liquid settle to bottom.  Then drain liquid and  carry on eating the noodles with some cut tomatoes on top...or add them into collard wraps with a layer of greens and add whole fruit - like jackfruit or mangoes.  It's a wrap!!

Lowfat Raw Pumpkin Sunflower Boats

Filling: 

5 Roma tomatoes
1/4 cup sunflower seeds and/or pumpkin seeds
1/2 bell pepper
1 lime, juiced
1 stalk of celery
few grinds of pepper
shake of mustard powder
4 oz. white button mushrooms
3 oz greens

Put all in food processor and puree well.  

5 carrots, made into noodles - with julienne peeler or spiralizer

Sauce:

1 peaches
10 cherry tomatoes
1 lemon, juiced
1 clove garlic
1/4 tsp freshly dried oregano
1/4 inch fresh raw turmeric, grated

Blend in blender until smooth.  

Put chopped basil* (cinnamon basil is lovely) on top.  

Assemble filling in large romaine leaf, top with carrot noodles and put sauce over the top.

No-Fat Raw Sharmila Nice Creams (a raw series of flavors)

No-Fat Raw Cuke Slices with Spinach Pesto and Sundried Strawberry Sauce

From the wondrous and immensely talented Amber Kristine Miller.  

Bottom Layer:

2 large cucumbers, sliced for the base

2nd Layer - Spinach Pesto:

4 oz spinach, chopped
big handful of cilantro, chopped
3 garlic cloves
4 dates
2 tangerines, juiced
5 basil leaves
1/4 tsp. oregano
pinch of sage
pinch of marjoram

Put in food processor and puree just until mixed but not soupy...leave with some texture. 

3rd Layer:

8 Roma tomatoes, sliced thick for next layer

4th Layer - Pico:

6 scallions, chopped, white and green parts
1/2 jalapeno
2 celery stalks, fined diced

Place a scoop of pico on each tomato.  

4th Layer - Strawberry Sundried Tomato Sauce:

1/2 pint strawberries
5 sundried tomatoes, soak
3 dates
1 lemon, peeled and whole (or squeezed for juice)

Put all of the ingredients, except dates and sundried tomatoes, in blender and blend until slightly liquified and then add dates and sundried tomatoes and let soak for 15 minutes.  Then blend up until smooth.  Place a dollop on top of the pico.  Enjoy!

No-Fat Raw Tyler Ketchup

Stefanie Vlahakis Weiss and I did a tag time co-creation of this recipe.  It is named after her son Tyler who actually made this himself...and is a world-class chef in the making.  :)

Tyler Ketchup:
1/3 mango
2 Roma tomatoes
1/4 cup sun-dried tomatoes
2-3 dates (depending on how sweet you like it)
1 celery stalk
1/4 of a red pepper
slice of jalapeno - optional

Blend and strain to take a bit of the liquid out.

Serve with Nichele's Jicama Fries Recipe (link to left)

No-Fat Raw Over the Moon Salsa

3 tomatoes
1/2 jalapeno
few slices of sweet onion
1/4 sweet red bell pepper
1 garlic clove
handful of cilantro

Blend but leave chunky.  Serve with romaine hearts for dipping.

Lowfat Raw "No-Fried" Green Tomatoes

- 3 medium-size green tomatoes, cut into 1/3-inch slices, salt both sides slightly 

Put slices of tomato in single layer on plate in fridge or in large container with lid.  If on plate, cover with parchment paper.   The next day, drain off liquid and lightly wipe off tomatoes (if desired) to remove salt. 

- Jade Tornquist's Fat Free Fully Raw High Carb Marinara Dressing (add any herbs or seasonings to the mix like Cajun seasoning or jalapenos) 

- 1/2 cup of hemp seeds for dipping coated tomato slices (or any other seeds if grind up in coffee grinder first - pumpkin seeds or sunflower seeds - or for more crunch use raw walnut pieces)  

Dip and coat both sides of slices of green tomato in marinara and then the hemp seeds (or walnuts) - both sides. 




No-Faw Raw Christmas in a Fruit Bowl

6 smashed bananas
2 chopped up apples
6 chopped up dates 
juice of a nectarine
zest from half a lemon (or more to taste) 
shake of cinnamon

No-Fat Raw Vegan Jicama Fries


Prep time = 7 mins.  

~ Peel & slice jicama into thick or thin shoestring fries 
~ toss fries in fresh lime juice, cumin, paprika, marjoram, thyme & himalayan pink salt (optional). 
~ parchment paper cone optional, although I highly recommend you do 

*1/8th tsp. each of onion and garlic powder - optional
