No-Fat Raw Jacked Up Dressing

3 cups fresh raw and ripe jackfruit
2 Roma tomatoes
1 celery stalk
thin sliver of ginger
slice of jalapeno
3-4 leaves basil, cut up
1 lime, peeled and thrown in whole
1 lemon, peeled and thrown in whole
5 deglet noor dates (if want sweeter) (or use medjool and use less)

* Can add in 2-3 oz. of spinach if want to make a green dressing :)

Throw all in blender, except basil (because can get bitter), until smooth.

No-Fat Raw Jacked Up Israeli Salad

1 med. cucumber, diced
5 Roma tomatoes, diced
15 jackfruit pieces
1/4 diced sweet onion
handful of cilantro leaves, chopped
slice of jalapeno, diced into tiny pieces
2 lime, squeezed

Put all in bowl and eat.

No-fat Raw Photosynthesis Marinara with Canoodles

Sauce:

4 Roma tomatoes
1 small eggplant
2 celery stalks
1 orange, squeezed
1 jalapeno slice
1 lime, whole and peeled
1 garlic clove

Blend or puree in food processor and then add the following:

2 sun dried tomatoes
5 medjool dates (or more for sweeter)

Let soak:
Let them sit in the pureed liquid of the blender for about 10 minutes.  Then add:

6 oz. spinach
1 big handful of cilantro, just grab top of a rinsed bunch

Blend until desired consistency.

Canoodles:
5 Persian cucumbers spiralized (just chop up center and butt and add to bowl:)

Pour marinara over canoodles and mix.  Sprinkle freshly dried oregano and a few shakes of cumin if so moved. :)

NoFat Raw Burrito with Eggplant Glaze

Inspired by Jade Tornquist's video (link2left) - start at about 9:30 for the dressing recipe.

In Blender:

1 peeled eggplant, cut into chunks
handful of cilantro
1 med. tomato
2 celery stalks
2 whole limes thrown in blender, peeled first
3 tamarind beans, pods and seeds removed, soak in lime juice that is in blender
4 medjool dates
1 garlic
slice of jalapeno

Put peeled whole limes in blender and blend and then tamarind to soak for 20 mins.

Marinate Mushrooms:
4 oz. mushrooms, marinated in juice of 2 limes

Burrito Innards:

3 oz. of spinach
1/4 onion, sliced
2 persian cucumbers, strips or spiralized
Remove stem end from collard leaf and shave down thick outside part, chop and add to spinach

Chop spinach and add onion and cuke.  Mix dressing over it.

Burrito:

3 med. collard leaves, shave down stem

Put dressed innards into Burrito.  Top with Marinated Mushrooms and top with half slices of tomato.  Sprinkle with dried oregano and rosemary.

Raw No-Nightshade Chili for Jackie :)

Tomato Sub:
1 lime juiced
7 medjool dates
1 mango
6 cauliflower florets
handful of fresh cilantro, chopped
1 garlic clove
avocado, cut into cubes (optional) - or put them on top when served

Chunky Chili:
2 navel oranges, segments cut in half
1/4 cup sweet onion, chopped
4 oz. mushrooms, rough cut
2 broccoli stalks, outside part shaved off, diced
8 asparagus tops
1 carrot, peel off ribbons until reach center core
1/4 tsp. oregano
1/8 tsp. cumin
7 basil leaves, cut up
dried sage, to taste
grated horseradish for spiciness (optional)
Green onion tops

Put Tomato Sub ingredients into blender or food processor.  Process until mixed well.  Add Chunky Chili ingredients and stir in spices.  Sprinkle green onion tops over the top.  Can put over a bed of spinach or mix in some spinach leaves. Maybe over sweet potato noodles.  :)

No-Fat Raw Bread

1 eggplant, juiced for pulp
20 okra, tops and bottoms cut off

Herbs (optional):
2 garlic
dried rosemary, dried from fresh
dried oregano, dried from fresh
fresh basil

Mix all but herbs in blender until smooth.  Mix in dried herbs (not fresh) because I find blending herbs makes them bitter.  Spread out flat on cutting board or round flat plate. Put thin slices of tomato on top.

Put in mesh laundry bag (large holes) to keep out critters.  Hang from clothing line in the full and direct sun for 10-12 hours - needs to be both hot AND dry.  Or put on chair and drape tomato plant netting over it.

Low-Fat Raw Green Chili Sauce

SAUCE
3 green onions
1 cup mushrooms
1 garlic
slice of jalapeno
3 dates
1/2 tsp freshly dried oregano
shake of cumin
1 tsp lemon juice
3 roma tomato
1 mango
1 stalk celery
handful of cilantro

To Put Whole Into Sauce (don't blend with sauce ingredients):
4 oz mushrooms, diced
spinach, chopped
4 cauliflower florets, process until rice sized bits
1/2 bell pepper, diced
1/3 of sweet onion, diced
2 roma tomato, diced
1/3 avocado chunks on top
1 green onions, pieces of it for decoration on top


Blend chili sauce in blender.  Stir in rest into sauce.  Pour over noodles or eat as a soup.

No-Fat Raw Simple Plantain Lasagna

SAUCE
4 medium tomatoes
1 stalk celery
1 lemon
slice of jalapeno pepper
2 sun dried tomatoes, soaked for 20 mins. in the pureed tomatoes (or water)
5 oz. spinach

big handful of cilantro

Puree in food processor.  Then stir into sauce (I find not blending spices keeps them from getting bitter):

3 basil leaves
1/4 tsp thyme
small pinch of rosemary
fresh oregano leaves

LASAGNA
2 ripe plantains (almost black) 
4 oz. button mushrooms, diced
Plantain cut down into long strip for lasagna noodles.  Line up in pan.  Put cut mushrooms over plantain slices.  Add sauce (see above).  Layer again.  


No-Fat Raw Daikon Noodles with Marinara and Greens

Sauce:

4 Roma tomatoes
1 mango
4 medjool dates
1 lemon, peel cut off and put in whole
1 celery stalk
1 slice of jalapeno

2 Sun dried tomatoes (soak in marinara - see below)
3 oz. spinach

Blend in blender until just liquidy and put in 2 sun dried tomatoes to soak for 20 mins.  Blend for a good minute until blended.  Then add spinach and blend until creamy (the more spinach - the creamier it gets - crazy!)

6 inches of daikon radish - spiralized
1/2 tsp. of freshly dried oregano and thyme
2 or 3 handfuls of greens - cilantro or lettuce sprinkled over top of noodles

Pour sauce over noodles and greens - delish!

No-Fat Raw Channa Masala for Marisa Young

  • 1/4 sweet onion
  • 6 roma tomatoes
  • 1/2 red bell pepper
  • 1 mango
  • 4 dates, take out pits
  • handful of cilantro leaves
  • 2 limes juiced
  • slice of jalapeno
  • 1/2 in fresh ginger
  • 1/2 tsp. grated fresh turmeric
  • 1/2 tsp garam masala
  • 1 clove garlic 

Blend until slightly chunky.  Put over cauliflower rice (put 6 cauliflower florets in food processor and blend until rice like).  Enjoy!
