BBQ SAUCE
1 mamey sapote, scooped out
1 mango, peeled and chopped
1/2 tsp. thyme
1 garlic clove, sliced
few slices of sweet onion (to taste) - optional
8 grape tomatoes
1/4 inch ginger, grated
1/4 inch horseradish, grated (start slow and keep tasting)
few squeezes of lemon
handful of washed cilantro leaves
slice of serrano (optional - if want some heat)
Place all ingredients in cuisinart and blend into creamy.*
PUT OVER:
Ripe red plantains, sliced at an angle
Button Mushrooms, preferably organic, well washed, sliced
Very meaty and satisfying!
* Sauce actually tastes much better with just 4 hours of being in the fridge because the bold flavors all melded together.
