Overnight soak finely diced cucumber (1/2 half of a large one) in juice of 1 lemon (a few shakes of sea salt optional)
The next day, strain lemon juice from cucumber pieces (put cuke pieces in separate bowl) and add juice to blender with:
5-7 cauliflower florets
1 celery stalk
1/4 red pepper
2 Roma tomatoes
Blend until liquified and add ingredients below into blender and let soak for 20 minutes or longer:
3-4 dates
1/4 cup sun dried tomatoes
1/4 cup macadamia nuts
shake of onion powder
shake of garlic powder (or 1 garlic clove)
sprinkle of sweet smoked paprika
slice of jalapeno (optional - or Nancy J. - add 5 Thai chilis and 1 mamacita)
After soaking for 20 minutes, blend well. Put in bowl with cucumber pieces and add:
1/4 sweet onion, finely minced
dash of black pepper if desired
